March is NUTRITION MONTH. A GREAT excuse to start incorporating more fruit and plant based protein into your diet. For those following a grain-free diet, or just need a morning grub switch-up, you will appreciate the ease and amazing flavour of this dish. I clocked many extra K’s (in my Mizuno Wave Universe kicks) while developing and TASTE TESTING this recipe, as I-could-not-stop-eating-it!
Ingredients:
1/2 cup (125 mL) ground natural almonds
1/2cup (125 mL) roughly chopped natural almonds
2 tbsp (30 mL) ground flax seeds
1 tbsp (15 mL) chia seeds
1/2 tsp (2 mL) each; ground cinnamon, finely grated fresh ginger and finely grated orange zest
1/4 tsp (1 mL) each; ground nutmeg and ground cardamom
Pinch salt
2 egg whites + 3 tbsp (45 mL) water, whisked together
2 tbsp (30 mL) agave nectar
1 tsp (5 mL) pure vanilla extract
2 cups (500 mL) mixed fruit such as; finely chopped apple, raspberries, chopped kiwi & blueberries
Additional garnishes (optional): sunflower seeds, toasted shredded coconut and dried cherries
Method:
Using a fork, stir together all ingredients (except for fresh fruit and additional garnishes) in a small sauce pot over medium heat. Cook, stirring for about 5 minutes or until egg whites are cooked and almond meal is steaming. Divide evenly between two serving dishes and garnish evenly with fresh fruit and additional garnishes if using.
Serves 2 (½ cup (125 mL) servings)
