Start your day off with a flavourful bowl of plant based protein packed oats. Many of the ingredients in this dish you likely already have on hand, and because this recipe requires no “cooking” it is a great excuse to have little hands help with. 1 cup (250 mL) large flake organic oats
½ cup (125 mL) roughly chopped raw whole almonds
1/2 cup (125 mL) dried blueberries
1/4 cup (60 mL) each; green pumpkin seeds and raw sunflower seeds (shelled)
2 tbsp (30 mL) each; ground flax seed, chia seeds and hemp seeds
2 tsp (10 mL) each; ground cinnamon and ground ginger
½ tsp (2 mL) ground nutmeg
1/4 tsp (1 mL) ground cardamom
Pinch salt
1 cup (250 mL) unsweetened almond milk (*or rice or soy)
½ cup (125 mL) orange juice
3 tbsp (45 mL) Canadian maple syrup (*or agave nectar or liquid honey (*note: honey is technically not vegan))
2 tsp (10 mL) pure vanilla extract
1 tsp (5 mL) finely grated orange zest
1 apple and 1 pear; well washed, cored and finely diced *leave skin on for added fiber and nutrients
Method
Place dry ingredients in a large bowl and set aside. Whisk together wet ingredients and pour over oat mixture. Stir until well combined. Stir in orange zest, diced apple and pear. Refrigerate for 4 hours or overnight. Stir well before serving. Makes about 4 cups (1 L).
